Food: Science and Myth

The course will be based on discussions of selected articles. The focus will be on critical thinking and fact-based discussion of food-related issues. The instructors will provide scientific input and help guide the discussions. Participants will not need a science background, but should remain open-minded. Participants will have access to articles through email, so an email account will be necessary. The course will cover readings and discussion of the history of eating, nutrition, diets, organic and conventional foods, GMOs and agriculture, among other topics. Class size will be limited to 15 participants.
