Online New Beer Quality: Freshness

Learn at your own pace how to achieve flavor stability in your products from a pioneer in beer freshness. In a series of entertaining, hugely informative but readily understandable video lessons, Charlie Bamforth will take you through a discussion of why (and whether) flavor stability matters, the positive and negative changes that can occur in beer over time and why these changes occur. You’ll also learn how to assess flavor change using your senses and other relatively simple methods, how to address raw materials and process in enhancing stability and how to prevent the skunking of beer.

Instructor(s)

Charles Bamforth, Ph.D., D.Sc., distinguished professor and leader of malting and brewing studies at UC Davis, has 40 years of academic and professional brewing expertise, including senior roles with Brewing Research International and Bass Brewers. He is honorary professor at the University of Nottingham. A fellow of several organizations, including the Institute of Brewing and Distilling (IBD), Bamforth recently retired as editor in chief of the Journal of the American Society of Brewing Chemists (ASBC) and has published extensively on beer and brewing. He is recipient of the ASBC's Award of Distinction and is past president of the IBD.
