Brewing Basics: Going Beyond the Kit

Master the basics of brewing all-malt beer with UC Davis' longtime homebrewers. See, smell, and taste the raw materials that go into making a fine bottle of beer, and gain the confidence to go beyond the extract homebrewing kit stage. Learn about several beer styles, the essentials of sanitation, and the intricacies of each step in traditional malt brewing. Discover mashing and boiling and gain knowledge of brewing yeasts and spoilage microorganisms. Observe hands-on brewing with state-of-the-art homebrewing equipment, and discuss alternative methods of packaging your homebrew.

This is an intermediate-level homebrewing class intended for budding homebrewers who have dabbled with the homebrewing process and are looking to understand what went wrong.

Note: You must be 21 years of age or older to enroll and attend.

Instructor(s)

Michael Ramsey is the teaching laboratory manager for the Department of Viticulture and Enology, UC Davis, planning and coordinating lab classes and assisting students. With a degree in fermentation science from UC Davis, he has had a long career in all phases of alcoholic beverage production. Ramsey has received numerous national and international commercial awards and can often be found judging at the local level or the state fair. In 2012, he was awarded the prestigious UC Davis Extension Outstanding Service Award for his contributions and dedication to the University's continuing education program.

Section Notes

The classroom is located on the East side of the building in Suite 5.  Please park in the large lot surrounding Sudwerk Brewing Company and use the sidewalk along 2nd Street to access the classroom.  Plan to arrive by 8:45 a.m. to check-in and pick up course materials. Coffee will be available when you arrive.  Lunch is on your own.  Please wear appropriate clothing for working around a brew kettle. Sunglasses, a hat and sunscreen are also recommended, as the brew kettle is outside.
